- First restaurant experience - grew up in his parents Blackpool Guest House and from a very young age became an accomplished potato peeler and plate washer
- Studied - HND in Hospitality management at Blackpool Catering College
- Worst kitchen nightmare – kicking a box out the back door, only to lose a clog in next doors back garden
- Most embarrassing moment – dropping peas on the Duke of Kent’s Lap (but did help him pick them off)
- Some of the most famous people served include Cher, Pavarotti, Eric Cantona, Bono, Noddy & Big Ears
- Other interesting facts – member of England’s Barmy Army & Captain/Selector of 12 cricket team – yet to win a game!
