Flying The Flag For Lancashire.

This week we decided we should remain patriotic to our roots and hit the road to celebrate Lancashire Day.  As true foodies, we really appreciate the quality of the produce that we have on our doorsteps and so will take up any opportunity to fly the flag of Lancashire and promote the work of our local suppliers.  On Tuesday night, we were kindly invited down to Fleetwood Library to celebrate this annual event.  Being told that it was already a sell out a few weeks in advance, it was to the drawing board to see what delights we should showcase the enthusiastic and hungry crowd.    

Van loaded, Paul, the main man of the night and Helen as his trusty sidekick, set off for what turned out to be a great night of food and celebration of all things local.  Along with Dawn (Fleetwood Libraries Manager) and her team, the night was a huge success which we were able to also use as an opportunity to raise extra money for Trinity Hospice.  A selection of our suppliers kindly donated prizes for a raffle which raised £170 including a fish voucher for A Welsh Seafoods, two beautiful joints of meat from Choice Meats and hampers from locally based suppliers All Fresh and Oncore.  Paul was lucky enough to be joined by Andy from A. Welsh Seafood's to talk about local produce and how he smokes his own salmon in Fleetwood, with the guests enjoying a few samples which we had brought along.

Produce supplied by Andy played a key role in the night with the crowd learning how to make dishes including:

fleetwood seafood cocktail
smoked salmon, king prawns, queenie scallops, apple puree

beer battered fish
twelve's famous triple cooked chips, tartar sauce

braised shin of beef
creamed potatoes, celeriac puree

The perfect mayonnaise- this was a critical moment!
We think this will be on a few dinner tables this Christmas.

At half time, a glass of wine and fish cone were enjoyed by all as well as the mysteries of how to make the perfect mash, mayonnaise and seafood sauce solved.  Not only did the public leave with a smile on their faces but so did we as it is always great to get out into the community spreading the Twelve word and you never know, keep yours eyes posted as we may be appearing in a venue near you soon, Happy Cooking!
